Từng sợi mứt giòn sựt, thấm đậm phần nước đường ngâm tạo vị ngọt thanh rất tuyệt. Đặc biệt bạn sẽ không phải dùng đến nước vôi trong đâu nha.
Cà rốt sau khi mua về bào vỏ, rửa thật sạch và để ráo nước. Sau đó, dùng dao bào, bào cho cà rốt thành sợi mỏng, dài. Chuẩn bị một tô nước đá lạnh, cho cà rốt vừa bào vào ngâm 10 phút, như vậy giúp cà rốt giữ được vị giòn, cứng và chắc chắn hơn. Sau khi đã ngâm xong thì vớt cà rốt ra xả qua nước lạnh cho sạch và để thật ráo nước nha.
Cho cà rốt bào vào âu lớn, thêm 150g đường, 1/2 muỗng vani, 1/4 muỗng muối và trộn đều lên để 3 tiếng. Khi thấy đường đã tan, chảy thành nước thì lấy ra sên mứt. Làm nóng chảo, cho cà rốt vào, vặn lửa nhỏ và bắt đầu sên cà rốt. Bạn đảo đều tay đến khi nước đường hơi sánh lại thì dùng đũa tiếp tục đảo đến khi đường khô hoàn toàn, kết tinh và bám vào quanh sợi mứt là có thể tắt bếp. Cho mứt cà rốt ra khay, để khô và nguội hoàn toàn rồi bỏ vào túi.
